Jamaican Curry Chicken

This boldly flavoured tender chicken curry dish is an easy dinner recipe! Peered with our signature Mild Curry No Goat Mix.


 

Ingredients

 

1 Jar of Curry No Goat Mix

870g  Chicken Thigh Fillets, Skinless & Boneless

480g Chicken Drumstick, Skinless & Boneless

400ml Coconut Milk 

4 tbsp Extra Virgin Olive Oil 

½ teaspoon salt

½ teaspoon pepper


 

To Serve

 

Coriander Sprig for Garnish 

Lime Wedge for Garnish 

Jasmine or Basmati Rice
 

Preparation 

  1. Marinate Chicken with the Curry No Goat Mix for 90 minutes before cooking in the fridge to add flavour to the outside of the meat and to tenderise it.  Also, there is the option to marinate overnight for a more flavourful result.

  2. Heat 4 tbsp of oil over medium heat in a heavy-bottom braising pot, dutch oven or stewpan. Stir in 3 tbsp of the remaining Curry No Goat Mix to Burn the Curry to release the aroma and flavour peerings of the curry spices. 

  3. Add the Marinated Chicken pieces, and 1 cup (227ml) hot water and boil. Cover with a lid, reduce heat to medium-low and simmer for 50 minutes.

  4. Remove the lid, turn the chicken pieces and add 1.69 cup (400ml) of coconut milk then continue to simmer, uncovered, until gravy is creamy in consistency and flavorful in taste.

  5. Peers with basmati or jasmine rice and our signature Ghost Pepper & Papaya Chutney.

  6. Add salt to taste, Serve and enjoy!
