
Vegan Fried Chick ‘n Tempura Bites
Calling all mushroom enthusiasts this recipe is a game changer! This popular dinner recipe is perfect for your next meal. Vegan Fried Chick ‘n Tempura Bites made with lightly battered Oyster mushrooms and a Crispy Garlic Bread Crumb, served with our very own signature Kingston Rum Sauce. The outer layer is crisp yet fluffy and the centre has the most deliciously moist and juicy Oyster mushrooms.

Ingredients
1 lb (16oz) Oyster mushrooms (sliced)
1 ½ tbsp of Lemon juice
2 Cup (118ml) Vegetable Oil for deep frying
¼ cup Cornstarch
¼ cup Plain flour
2 teaspoons garlic powder
2 teaspoons paprika powder
2 teaspoon onion powder
2 teaspoon turmeric powder
¼ cup Baking Soda
45ml Coconut oil
200ml Soda water (¾ cup plus 5tsp)
1 ½ teaspoon Kosher salt
1 teaspoon Black pepper
1 cup (80g) Panko bread crumbs
4 large Garlic cloves smashed
3 tablespoons (45 ml) extra virgin olive oil
Finely chopped fresh herbs, such as parsley, thyme, or rosemary
To Serve
Drizzle of our signature Kingston Rum Sauce or Carolina Reaper Chilli Sauce.

Rinse the oyster mushrooms just enough to wash off any dirt, dry them with a paper towel to make sure they are completely dry before cooking, and cut into bite-size pieces 3cm (1.2 in.).

In a mixing bowl Sift the flour, cornflour, and baking soda. Make a well in the centre and add the Coconut oil and soda water. Fold the mix of ingredients together very gently.

To make the Crispy Garlic Bread Crumbs, on low to medium heat add the smashed garlic cloves and sauté, stirring often, until fragrant and lightly golden brown, about 2 to 3 minutes

Add the panko bread crumbs to the pan and stir to coat evenly in the oil mixture. Continue cooking, stirring and tossing frequently, until deeply golden in colour, about 4 to 6 minutes. Season with the salt and pepper, and add the finely chopped fresh herbs (if using).

Immediately transfer to a large bowl to cool (enjoy or discard the garlic cloves before storing).

Add the oil to a heavy-bottomed pot suitable for frying, but fill it no more than half full, and heat over medium-high heat until it reaches 350 F (using a deep-fry thermometer test temperature).

Moving quickly, lightly coat the mushrooms with the flour.

Dip the mushrooms into the batter and slightly shake it off to remove excess batter and coat with the Garlic Bread Crumbs, In small batches at a time transfer to the pot and fry for 3-4 minutes until golden brown.

Once cooked, remove excess oil with a kitchen paper towel and serve immediately with our Kingston Rum Sauce or Our signature Carolina Reaper Chilli Sauce.
